Horse salami without garlic is a delicate product made from raw horse and pork meats, salted and seasoned with a blend of herbs and spices. The meats are minced and stuffed into a synthetic casing of 25mm caliber and approximately 90cm in length, in two sections tied together with string and a loop. After a minimum aging period of 10 days, the product reaches its typical fragrance. The casing is not edible.
